And after this evaluation, one restaurant won first place in Mexico City.
The Michelin Guide and its criteria
“This first selection, very promising, shows how the country becomes the stage for regions with cultures and traditions as affirmed as they are distinct.
From sophisticated restaurants to bustling street taquerias, our inspectors were impressed by this constant culinary effervescence, authentic and tasty,” said the International Director of the Michelin Guides, Gwendal Poullennec.
The 5 criteria for awarding Michelin Stars are:
- Selection and quality of the products.
- Creativity, mastery of technique.
- Personality of the chef in the kitchen.
- Mastery of the harmony of flavors.
- Regularity over time and of the proposal as a whole.
These criteria determine, as you can read, an evaluation that extends over time, so it could also be withdrawn or downgraded.
The Michelin guide assigns from one to three “stars of good food” to the highest quality gastronomic establishments in the world.

It is worth considering that the evaluation of the Michelin Guide team in Mexico made a study that allowed us to have two restaurants that are among the best in the country, and precisely in Mexico City.

For the selection of the Michelin Guide Mexico 2024, the criteria applied globally by its expert inspectors were used: quality of the products used, mastery of culinary techniques, harmony of flavors, personality of the chef expressed in the dish and consistency over time and the menu as a whole.
The guide evaluated 157 restaurants in Mexico City and the states of Oaxaca, Baja California, Baja California Sur, Quintana Roo and Nuevo León.
In this first edition, two restaurants received two Michelin stars, the highest level of distinction, and another 16 establishments received one Michelin star.
Among them, the taqueria El Califa de León, a modest establishment located in the San Rafael neighborhood of the country’s capital, which is also the only exclusively taco restaurant on the list, stands out. It was the first to receive a Michelin star in Mexico.
In addition, six restaurants received the Michelin Green Star in Mexico for their commitment to more sustainable gastronomy.
Meanwhile, another 42 were recognized in the Bib Gourmand category, which rewards the offer to gourmets and travelers of excellent value for money.

Restaurant Pujol
One of the Michelin-starred restaurants in Mexico City is Pujol, but it has two stars, placing it at the top of the gastronomic guide.
Chef Enrique Olvera’s Mexican restaurant was recognized in fifth place by The World’s 50 Best Restaurants 2022 and for eleven consecutive years has marked its presence in the emblematic listing.

Quintonil restaurant focuses on highlighting the indigenous flavors of Mexico, using local ingredients and traditional culinary techniques reinvented under a modern vision.
